I'm going to date myself here, but in high school one of my absolute favorite movies was "Pretty In Pink."  I mean, what teenage girl of the '80s could resist those iconic girl-meets-boy brat-pack love stories?  Especially when a prom and puffy pink prom dresses were involved!

To this day ... some 30 years later ... I'm hard-pressed to see something all dressed up in pink without thinking of the movie's theme song of the same name.  Or of Duckie's sweet silliness.

When it comes to holiday meals, I'm hard-pressed to decide what I like best ... all the tasty sides or all the fabulous pies.  It's a decision that's not easy for me to make.  But one thing I can say for sure, I truly couldn't care less about the main dish.  That's right, I could totally go without the Thanksgiving turkey or the Christmas ham.  Just pass the mashed potatoes, creamy broccoli casserole, and pumpkin slab pie, please!

Yes, until we had our sweet 7-year-old Little Miss H. join our family 2 years ago, I truly had no understanding of just how much candy overload comes along with having a kid.  With Halloween trick-or-treating and fall festival events, followed by Christmas parties, Valentine's candy exchanges, and then Easter egg hunts and bunny visits, there seems to be a never-ending stream of candy flowing through our life.

I discovered the beauty of slab pies last Thanksgiving season when I turned our family-favorite pumpkin pie into Pumpkin Slab Pie.  At first, members of the family were skeptical.  Just what is  a slab pie? ... some thought.

Well quite simply, slab pie is a shallow pie made in a rimmed baking sheet or jelly roll pan.  It's got all the deliciousness of its traditionally-made counterpart ... only thinner.  And wider. 

Which has some wonderful benefits when it comes to big feast meals or cooking for a crowd.


Pecan Slab Pie's got all the deliciousness of its traditionally-made counterpart with more servings and more serving-size-flexibility per pan!

For the baker ~ slab pies = more servings per pan.  When cut into triangles as shown in my photos, this pan yields 24 servings.  That makes feeding a crowd a snap!

For the eater ~ slab pies = thinner filling and more flexibility in choosing your serving size.  Which means the most important thing of all when it comes to big feast meals ... you can easily find room in your tummy to indulge in more than one dessert!

And hey, that's the best slab pie perk of all.

So this Thanksgiving season, I decided to turn my Mom's pecan pie into Pecan Slab Pie.

Mom's pecan pie has been a family-favorite for years.  But it's a tad bit different than most pecan pies ... because the filling is made with Jell-o vanilla pudding ... the cooked kind ... in it.

The dry pudding mix creates a filling that's not quite as syrupy-sugary-sweet as many pecan pies can be.

This may sound a bit strange, but believe me, it creates a very tasty filling!

The dry pudding mix is whisked together with the usual corn syrup and eggs to create the same custardy-type filling as traditional pecan pie, but it creates a filling that's not quite as syrupy-sugary-sweet as many pecan pies can be.

I wondered if Mom's filling would work to create a tasty slab pie.  And true to form for me, I gave it a try.

I'm happy to report the answer is a resounding yes!

To create the slab pie version's filling, I made 1 & 1/2 times Mom's recipe for traditional pie.  So if you'd like to try to make a slab pie with your favorite pecan pie filling instead of Mom's, I recommend increasing your ingredient amounts to make 1 & 1/2 "batches" of your recipe.

Pecan Slab Pie

Is pecan pie on your menu this holiday season? Easily feed that Thanksgiving or Christmas dinner crowd with Pecan Slab Pie. It's got all the deliciousness of its traditionally-made counterpart with more servings and more serving-size-flexibility per pan!
prep time: 20 Mcook time: 42 Mtotal time: 62 M

ingredients:

  • prepared crust for a 2-crust pie
  • 1 large (4.6 oz) package Jell-o cook & serve vanilla pudding
  • 1 1/2 c. light corn syrup
  • 2 eggs, lightly beaten
  • 1 1/4 c. evaporated milk {not quite all of a 12 oz. can}
  • 2 1/2 c. pecan halves {I use 2 cups pecans halves + 1/2 cup chopped pecans}

instructions:

How to make Pecan Slab Pie

  1. Line a 15x10" rimmed baking sheet with aluminum foil; lightly spray with non-stick cooking spray. Fit both crusts into the bottom and up the sides of the baking pan, cutting pieces and fitting together as needed. Press together seams well with your fingers. Fit a piece of aluminum foil on top of the crust. Bake at 375 degrees for 8 minutes. Remove from oven and remove foil.
  2. While crust bakes, whisk together dry pudding mix and corn syrup. Gradually add evaporated milk and eggs, whisking to fully incorporate after each addition. Stir in pecans.
  3. Place baking pan with crust on oven rack. Carefully pour in pecan filling and spread evenly over crust.
  4. Bake at 375 degrees for 30 - 35 minutes until filling is set and golden brown. Cool on a rack. Cover and chill at least 3 hours before serving. Store in the refrigerator.
  5. At serving time, garnish with whipped cream, if desired.
TRACEY'S NOTES
  1. To create this slab pie version's filling, I made 1 & 1/2 times my Mom's recipe for traditionally-made pecan pie. So if you'd like to try to make a slab pie with your favorite pecan pie filling instead of Mom's, I recommend increasing your ingredient amounts to make 1 & 1/2 "batches" of your recipe.

I mean, just look at that layer of creamy pumpkin deliciousness topped with a crunchy layer of cake-y pecans and chocolate chips.  It's just calling out for a fork to dive right in.

To create this tasty cake, simply whip up a quick pumpkin-pie-like mixture and spread it in the bottom of a 9x13-inch baking dish.  

Then sprinkle the top evenly with dry Martha White® Chocolate Chip Muffin Mix ...

Then sprinkle on chopped pecans, drizzle the top with a good dose of melted butter, and bake it all up until it's golden brown.

  • 1 (15 oz.) can 100% pure pumpkin
  • 1 1/4 c. (10 oz.) evaporated milk
  • 3/4 c. brown sugar
  • 3 eggs
  • 2 tsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 2 (7.4 oz.) packages Martha White® Chocolate Chip Muffin Mix*
  • 1 c. (2 sticks) butter, melted
  • 3/4 c. chopped pecans

instructions:

How to cook Chocolate Chip Pumpkin Dump Cake

  1. Place eggs in a mixing bowl and beat lightly with a whisk. Add pumpkin, evaporated milk, brown sugar, pumpkin pie spice, and salt; whisk until well combined.
  2. Pour pumpkin mixture into a greased 9x13-inch baking dish.
  3. Sprinkle dry muffin mix evenly over the top of the pumpkin mixture. Sprinkle pecans evenly over muffin mix. Drizzle melted butter all over the top. {Do not stir any of this ... just leave it in layers.}
  4. Bake at 350 degrees for 45 - 50 minutes until the center is set and edges are lightly browned.
  5. Cool and then refrigerate. Serve chilled. 
  6. Cut into squares and top with a dollop of whipped cream, if desired.
TRACEY'S NOTES
  1. *Or, you can substitute 1 (15.25 oz.) box yellow cake mix + 1/3 cup mini chocolate chips for the muffin mix.
  2. For even more chocolatey-ness, sprinkle an additional 1/4 cup mini chocolate chips on top of the muffin mix. That's the way we like it at our house!

I have to admit, garnishing & "prettying up" my food is not my strong point.  Heck, before I became a food blogger the thought of garnishing my foods to give them that little extra eye appeal never crossed my mind.  I guess I'm a subscriber to the "food is inherently beautiful just as it is" philosophy!

But ... truth be told ... a little sprinkling of fresh herbs, a strategically placed sprig of mint or parsley, a shaving of chocolate, or even just a dash of freshly-cracked pepper can go a long way in giving foods a little extra sparkle and appeal.  When it comes to adorning those desserts?  Candied Pecans can add that little extra-special decorative touch to so many sweet treats!

Well, back-to-school season is here and summer is quickly coming to end.  But that doesn't mean we have to stop enjoying one of our all-time favorite summer treats.  Campfires may be slowing down for the season, but our enjoyment of s'mores sure doesn't have to.

Well, hello National Cheesecake Day!  I'm not usually up on all the kinda-random food holidays that exist, but a day dedicated to creamy cheesecake deliciousness?  That's one I can get behind!  I certainly  love a great cheesecake.  How about you?

My absolute favorite cheesecake is our family's go-to Thanksgiving dessert, creamy Pumpkin Cheesecake.  It's smooth, cinnamon-laced pumpkin deliciousness is divine.
